$20 meal prep
It is no secret that college students don’t have much money or time to prepare meals for themselves. I wanted to find some ways to show students what they can get on a budget and with little time.
I hit Aldi with a $20 bill in my hand and no more 30 minutes.
With the groceries I picked up, I made these tasty rainbow veggie pinwheels. They are perfect for a meal prep in addition to a hard boiled egg, grapes and cheese cubes.
This recipe makes 4 prepared meals, all for less than $20.
I found the recipe on Pinterest, which I have added to a curated board of affordable, easy college friendly meals. The board includes the recipe for these veggie pinwheels along with many more!
